YOGURT AND FIG CAKE

Yogurt & Fig Cake Recipe

Ingredients

  • 6 each             Fresh figs

  • 3 tbsp              Honey, plus extra for glazing

  • 1 cup               Softened Butter

  • ¾  cup             Sugar

  • 1                      Grated zest lemon

  • 1                      Grated zest orange

  • 4                      Eggs separate

  • 2 cups             All-purpose flour

  • 1 tsp                Baking Powder

  • 1tsp                 Baking Soda

  • 1 cup               Plain Yogurt

  • to taste          Salt & Pepper

Equipment

  • Hand mixer

  • Mixing bowls

  • 9 inch non stick round baking dish

  • Spatulas

Directions

  1. Preheat the oven at 350º F.

  2. Lightly grease a 9 inch round pan, and line the bottom with parchment paper, arrange the figs on the bottom and drizzle the honey.

  3. In a large mixing bowl, cream together the butter, the sugar, the lemon and orange zest until the mixture become pale and fluffy, then beat the egg yolks a little at the time.

  4. Sift together the flower, baking soda and baking powder. Add a little to the cream mixture, beat well, and then beat in a spoonful of plain yogurt. Repeat this process until all the dry ingredients and the yogurt have been incorporated.

  5. Whisk all the eggs whites in a grease-free bowl until they form stiff peaks. Stir half of the whites into the mixture, then pour the rest.

  6. Pour the mixture over the figs in the pans, then bake for 1 ¼ hour until golden.

  7. Turn out the cake onto a wire rack, and cool. Drizzle the honey and serve.
