SIMPLE SUMMER WATERMELON SALAD

Is it really a summer if you don’t have watermelon at least once during the season? Not only is it quite the crowd pleaser, watermelon is full of nutrients (and water) that you won’t want to miss. This refreshing fruit related to cucumber, cantaloupe, zucchini and pumpkin, is also a good source of the antioxidant lycopene and the amino acid known as citrulline. In fact, watermelon is known to be one of the richest sources of this specific amino acid found in a food.

Watermelon is also full of vitamin A, B and C, as well as potassium. And carries with it not just summer nostalgia, but a host of health benefits, like lowering blood pressure. So next time you pass a watermelon at the farmer’s market or the grocery store, make sure to grab one. There are many ways to include it in your meal, like this Simple Summer Watermelon Salad for one. It also makes a delicious and hydrating snack as well.

Simple Summer Watermelon Salad Recipe

Serves 6

Ingredients

Salad

  • 2 lbs Seedless Watermelon, cubed

  • 4 oz Baby Arugula

  • 1 each Italian Red Onion, thinly sliced, soaked in ice water

Dressing

  • 2 TBS Red Wine Vinegar

  • 1 ½ Orange, juiced

  • Pinch Salt & Pepper, to taste

Garnish

  • 1 cup Walnuts, roasted and chopped coarsely

  • 1 cup Ricotta Salata, grated coarsely

  • 2 Tbsp Extra Virgin Olive Oil, to finish

Equipment

  • Cutting board

  • Chef’s knife

  • 2 Mixing bowls

Directions

  1. Start by slicing the onion and soaking in ice water let soak for 10-15 minute and drain.

  2. In a bowl combine watermelon, arugula and onion.

  3. In a separate container mix the vinegar Orange juice salt and pepper.

  4. Combine the watermelon with the dressing.

  5. Arrange on a platter or plates top with walnuts and cheese, drizzle with EVO and serve.
