STRAWBERRY SHORTCAKES WITH ALMOND WHIPPED CREAM

Strawberry Shortcakes with Almond Whipped Cream Recipe

Ingredients

  • 5 cups strawberries, quartered

  • 1/4 cup Lemon

  • 1/2 cup sugar

  • 1/4 cup maple syrup

  • 3 cups All purpose flour

  • 1 1/2 tbsp baking powder

  • 1 tsp salt

  • 1/2 cup sugar

  • 1 1/2 vanilla

  • 2 1/3 cups cream, 1/2 & 1/2 or milk

  • 3/4 cup sliced almonds

  • 1/2 cup sugar

  • 1 cup heavy cream

  • 1 tsp almond extract

  • to taste sugar

Directions

  1. Preheat oven to 400 degrees F.

  2. In a large bowl, combine the strawberries with the lemon, sugar and maple syrup. Mix well to incorporate, cover and chill in the refrigerator for at least 1 hour.

  3. in a large bowl, combine the flour, baking powder, salt and 1/3 cup of sugar. In another bowl, combine the cream and vanilla. Add both mixtures together and mix well until a dough forms. Form into biscuits.

  4. Mix together the almonds and 1/2 cup sugar. Dip the top of each biscuit into the almond/sugar mix.

  5. Place onto a greased sheet tray and bake in the oven for about 25 minutes.

  6. Whip the cream with the almond extract and sugar until stiff peak forms.

  7. Add strawberries and whipped cream on top of shortcakes, and enjoy!
