BLUEBERRY SPELT SCONES

Blueberry Spelt Scone Recipe

Ingredients

  • 2 cups whole spelt flour

  • 1 tbsp baking powder

  • 1/2 tsp fine grain sea salt

  • 1/4 cup white sugar

  • 1/3 cup cold butter, cut into thin 1/2 inch squares

  • 1 cup chocolate chips, chopped

  • 1 tbsp orange extract

  • 1 cup half and half

  • 1/4 cup frozen blueberries

Directions

  1. Preheat oven to 350 degrees F.

  2. In a large mixing bowl, mix together the flour, baking powder, salt and sugar until well incorporated.

  3. Add the butter and gently toss/mix until the mixture is well blended.

  4. Stir in the blueberries and chocolate chops into the flour mixture until well incorporated. Pour in the half and half and orange extract and stir until a soft and slightly wet dough forms.

  5. Turn out the dough onto a well dusted work surface.

  6. Roll the dough until about 1/2 inch thick. Cut the dough into wedges, or stamp out into circles with a biscuit/cookie cutters.

  7. Place onto a parchment lined sheet tray.

  8. Put in the oven for about 12-16 minutes until golden brown. Remove to a cooling rack.
