White Bean & Greens Minestrone Recipe


  • 2-3 Tbsp          Olive Oil

  • 1 medium        Onion, diced

  • 1-2 stalks         Celery, diced

  • 1 medium        Carrot, small diced

  • 2 cups              Canned Cannellini Beans, drained

  • 1 sm. bunch  Dinosaur Kale, rough chopped

  • 2 cups              Fire Roasted Diced Tomatoes

  • 8 cups              Vegetable Stock or Chicken Stock

  • ¾ cup              Arborio Rice


  • Chef’s knife

  • Bread knife

  • Stockpot

  • Wooden spoon

  • Prep bowl

  • Ladle

  • Slotted spoon


  1. Heat the oil in a large stockpot on medium heat. Add the in the onion, celery & carrot; sauté for about 5-6 minutes until starting to turn tender.

  2. Stir in half the Cannellini beans along with the tomatoes, greens, stock & rice. Bring to a boil, reduce to a simmer & cover for about 25-30 minutes until the vegetables are tender & the rice is cooked through. Stir in the remaining beans & simmer for another 3-5 minutes.
