Super Simple Tomato Salad

  • 5 large ripe red heirloom or beefsteak tomatoes, sliced thin
  • 1/2 cup red onion, sliced thin
  • 1 tablespoon basil, or parsley, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon red wine vinegar
  • 2 clove garlic, minced
  • 1 tablespoon black olives
  • salt and fresh ground pepper, to taste
  • crusty bread, (optional) for serving

On a serving plate, arrange the tomato slices, add the onions, drizzle with olive oil and vinegar. Season with salt and black pepper. Add some herbs and black olive. Do not refrigerate.
