ROASTED ARTICHOKE HEARTS

With limited trips to the grocery store these days sometimes we have to get creative and take a trip to our freezers instead. Next time you do make it to the store, grab a few bags of frozen artichoke hearts and you can have a healthy and delicious side dish ready in no time. This is a recipe from our Anti-Inflammatory Living class that we normally offer in-person in our kitchens. Since we can’t be together in person right now, we thought you might want to try it yourself at home!

Ingredients

  • 1 lb. Baby Artichoke Hearts, Frozen

  • 4 tbsp Olive Oil

  • 4 cloves Garlic, rough chop

  • 1 tbsp. Rosemary, finely chopped

  • 3-4 tbsp Parsley, minced

  • Salt & peper to taste

Directions

  1. Preheat oven to 425 degrees F

  2. Toss the artichokes in olive oil and garlic and season with salt and pepper.

  3. Place onto an oiled sheet tray.

  4. Bake in over for about 25-35 minutes, stirring twice, until tender and light golden brown.

  5. Garnish with parsley and rosemary.
