Sweet Potato Fries

Chef Olive is back in his home kitchen (staying safe!) to share this cooking demo of an easy and tasty sweet potato recipe. Sweet potatoes are often relatively easy to find (even during a global pandemic) and they last in your pantry for some time. Additionally, there are many ways to prepare sweet potatoes—they can be boiled, baked, steamed or fried—and utilized in a wide variety of dishes. This recipe is simple to make, tastes delicious and is often a crowd pleaser. This is a great recipe to try making with kids and teens—or have them follow along with the demo to make themselves.

From a nutritional standpoint, sweet potatoes have a lot going for them. They are high in fiber and rich in antioxidants, vitamins and minerals. Most notably, sweet potatoes are a good source of beta carotene (Vitamin A), Vitamin C, and potassium. The high fiber content makes them gentler on our blood sugar response compared to regular potatoes, and help support a healthy digestive tract.

Have these as a snack paired with a dip of your choice, or enjoy as a side dish for a meal.

INGREDIENTS

  • 2 lb Sweet Potatoes

  • 2 Tbsp Olive Oil

  • Sea Salt and Pepper to taste

Optional (Yogurt Dipping Sauce)

  • 1 cup Yogurt

  • 1 Lime, juiced

  • 2 Tbsp Mint, cut in chiffonade (thin ribbons)

EQUIPMENT

  • Chef’s knife

  • Roasting sheet

RECIPE

  1. Preheat an oven to 425°F.

  2. Cut the potato in the skins in 3/4 inch edges.

  3. In a bowl place the potatoes, add the olive oil, sprinkle with some salt and toss to coat.

  4. Place in a lined sheet tray, skin down, wedge facing up.

  5. Roast for about 20 min, add some oil halfway through, and back in the oven until the potatoes are tender and browned on the edges, another 10-15 min.

  6. Meanwhile, In a large bowl, stir together the yogurt, mint and lime juice. Chill.

  7. Season with salt and pepper serve immediately with the yogurt sauce.
