Grilled Corn, Zucchini & Peach Salad Recipe


  • 2 ears              White or Yellow Corn

  • 2 each             Zucchini, cut in quarters lengthwise

  • 2 each             Yellow Peaches, cut in quarters

  • ½ each            Red Onion, ¼ inch sliced

  • ¼ cup              Rice Bran Oil

  • 4 heads           Romaine, cut into bite size pieces

  • 1 cup               Feta, ½ inch diced

  • 2 each             Lemon, zest and juice

  • ¼ bunch         Oregano, chopped finely

  • ¾ cup              Extra Virgin Olive Oil

  • 1 Tbsp             Dijon Mustard

  • To taste           Salt and pepper


  • Chef’s knife

  • Spoon

  • Whisk


  • Rubber spatula


  1. Preheat grill or grill plates.

  2. Season corn, zucchinis, peaches, red onion with rice bran oil and some salt.

  3. Grill fruits and vegetables until tender.

  4. Cool down and cut them into bite size pieces.

  5. In a mixing bowl, combine lemon zests and juice, oregano, oil, Dijon mustard, salt and pepper.

  6. Combine in a large mixing bowl the romaine, fruits, feta and vegetables, salt, pepper and some of the dressing.

  7. Taste and adjust seasoning and dressing if needed.
