GRILLED CORN, ZUCCHINI & PEACH SUMMER SALAD
Grilled Corn, Zucchini & Peach Salad Recipe
Ingredients

2 ears White or Yellow Corn

2 each Zucchini, cut in quarters lengthwise

2 each Yellow Peaches, cut in quarters

½ each Red Onion, ¼ inch sliced
-
¼ cup Rice Bran Oil
-
4 heads Romaine, cut into bite size pieces

1 cup Feta, ½ inch diced
-
2 each Lemon, zest and juice
-
¼ bunch Oregano, chopped finely
-
¾ cup Extra Virgin Olive Oil
-
1 Tbsp Dijon Mustard
-
To taste Salt and pepper

Directions
-
Preheat grill or grill plates.

Season corn, zucchinis, peaches, red onion with rice bran oil and some salt.

Grill fruits and vegetables until tender.
-
Cool down and cut them into bite size pieces.

In a mixing bowl, combine lemon zests and juice, oregano, oil, Dijon mustard, salt and pepper.

Combine in a large mixing bowl the romaine, fruits, feta and vegetables, salt, pepper and some of the dressing.

Taste and adjust seasoning and dressing if needed.
